3 Fabulous Summer Salads You Need to Try

Warm weather is finally here.  With it comes an opportunity to lighten up with our food (and mood!).  I love making salads for dinner and parties.  I happen to grow a few varieties of lettuce and spinach in my garden, so any opportunity to use them in a salad is a bonus.  Here are 3 summer salad recipes I can’t wait to try this summer.

I found this Southwestern Chopped Salad with Cilantro Dressing on Pinterest.  I think this would be the perfect salad for a warm night with a glass of white wine.  Or the perfect salad to make for a backyard BBQ.   The recipe is in the link.

This salad is a meal in itself!  For those who like to kick up the heat, this Sriracha Lime Chicken Chopped Salad looks delicious.  So many flavors in one bowl.  Recipe in link.

Now this salad happens to be a staple in my home.  My friend Michele has made this for years and it’s a knock-off from a popular restaurant in Chicago called Portillo’s.  I make this salad all the time for parties and people ask me over and over to make it again (and for the recipe, too!).  Portillo’s Chopped Salad makes a fantastic side dish at a party … or you can add some diced chicken to make it a meal on it’s own.  Recipe in link.
