National Pi Day & Strawberry Pie?

It’s National Pi Day!  What is Pi Day? According to Piday.org:

Pi Day is celebrated on March 14th (3/14) around the world. Pi (Greek letter “π”) is the symbol used in mathematics to represent a constant — the ratio of the circumference of a circle to its diameter — which is approximately 3.14159.

Pi has been calculated to over one trillion digits beyond its decimal point. As an irrational and transcendental number, it will continue infinitely without repetition or pattern. While only a handful of digits are needed for typical calculations, Pi’s infinite nature makes it a fun challenge to memorize, and to computationally calculate more and more digits.

But to most of us, I think we somehow get the idea that Pi Day is about eating our favorite pie!  I wanted to share a family recipe for my Grandma’s Strawberry Pie.  My Grandma has passed away, but this was a favorite at Spring and Summer family parties.

Strawberry Pie

Make a pie crust (we use Pillsbury ready made pie crusts).  Bake for 10-12 minutes at 400 degrees in a pie pan.

Combine in a saucepan:

–  1 cup sugar

– 2 tablespoons cornstarch

– 1 cup water

Boil until clear and thick.  Remove from heat and add 1/4 cup strawberry Jello mix and a few drops red food coloring.  Cool.  Cut up 1 quart strawberries and lay in pie shell.  Drizzle with sauce and chill for at least 6 hours.

Serve cold and top with fresh whipped cream.
