Sweet Valentine’s Day Cookie Recipe

As Valentine’s Day gets closer, I have been gathering cute ideas for my kids classroom parties on Pinterest.  The ideas you can find on there are really amazing!  I also love to bake, so I was thinking of a cute cookie to make for teachers and friends.  A friend at work always raves about my cranberry and white chocolate shortbread cookies so I thought, why not make those?  They have the beautiful red and white colors for Valentine’s Day and everyone loves them!  I originally got this recipe from the Kraft website, but here it is for you to make:

Cranberry_White_Chocolate_Shortbread

Cranberry and White Chocolate Shortbread Cookies

Ingredients:

2 cups  (4 sticks) butter, softened
1 cup  sugar
4 cups  flour
1 package white chocolate chips
1-1/2 cups  dried cranberries (I use craisins)

HEAT oven to 350°F. Beat butter and sugar in large bowl with mixer until light and fluffy. Add flour; mix well. Stir in chocolate and cranberries.

DROP rounded tablespoons of dough, 2 inches apart, onto baking sheets; flatten slightly.

BAKE 10 to 14 min. or until lightly browned. Cool 5 min. on baking sheets. Remove to wire racks; cool completely.

Once you have your cookies made up, why not gift them in some really pretty packaging?  I love our personalized cookie boxes.  They are adorable and perfect for gifting your baked goods.  I also love to use plastic containers wrapped with red and white twine.  You can add your personal note on top!
