What’s in Your Garden?

Every Spring I start a vegetable garden in my yard as well as a few pots of herbs.  My kids help pick out the vegetables we will grow each year.  This year we focused on a variety of tomatoes, green peppers, carrots, broccoli and spinach.  We already ate all the carrots, broccoli and spinach.  But the tomatoes and green peppers are just about ready to pick.  tomatoes greenpeppersI feel like growing your own vegetables inspires healthier eating.  My kids learn so much about where food comes from when you start with a bed of soil and some packets of seeds.  And when the vegetables are ready to pick, we all discuss what we should make with our fresh veggies.  The green peppers are perfect for chicken fajitas and stuffed green peppers.  The tomatoes are great for BLT’s and homemade marinara sauce.
